Tomato Rice
from India
Ingredients:
1 cup long grained Rice
4 Ripe Tomatoes
3 Onions, chopped
2 Green chillies, cut
1/2 teaspoon turmeric powder
6 dry red chillies
2 teaspoon coriander seeds
3 teaspoon Bengal Gram Dal
1 teaspoon Urad dal
1/4 teaspoon fenugreek seeds
1/2 teaspoon asafoetida
1 teaspoon mustard seeds
2 teaspoon peanuts
3 teaspoon corn oil
Few curry leaves
Salt
Directions
1. Cook the rice and spread on a plate to cool.
2. In a frying pan, fry (saute) the red chillies, coriander seeds, bengal gram dal, urad dal, fenugreek seeds, and asafoetida. Grind to a fine powder and set aside.
3. Strain the juice from the chopped tomatoes. Set aside.
4. In a pan, heat the tomato juice (step 3), salt and turmeric powder. Simmer till it thickens. Add the ground masala powder (step 2) and mix well.
5. Heat 3 tablespoons of oil. Add the mustard seeds, peanuts and curry leaves. When the mustard seeds splutter, add chopped green chillies and onions. Fry for a few minutes till it turns golden brown. Mix in the rice and the tomato concentrate (step 4).
