Yogurt
Yogurt is another foundation product of Indian cooking. It is healthy and
delicious.
Ingredients:
1 quart milk
1 tablespoon plain yogurt
Directions:
Bring the milk to the boiling point. Cool to lukewarm. Place the yogurt in a glass or enamel bowl, pour the milk over it, and mix well. Cover, and leave overnight in a warm place. It will set. Use when quite cold. Once you have made yogurt, always keep a little to start the next batch.
PS: During winter months, you can keep this in an oven overnight if you have a gas fired furnace with pilot light. The warmth of the pilot light is enough to keep the mixture at the correct temperature.
