Southern Vegetable Medley
Ingredients
1/2 pound okra, sliced (2 cups)
4 ounces salt pork
4 fresh ears of corn
4 medium tomatoes, peeled and cut up
1/2 Cup chopped onion
1 to 2 teaspoons chili powder
1 teaspoon instant beef bouillon granules
1 cup water
Directions
1. Rinse and chop salt pork. In a 10-inch skillet
cook salt pork till crisp.
2. Cut corn from cobs. Add corn, fresh okra, water, onion, chili powder, and
beef bouillon granules to salt pork in skillet. Bring to boiling; reduce heat.
Cover and simmer 20 minutes.
3. Add tomatoes; cover and simmer an additional 10 minutes
Makes 8 servings.
