Make Merry in the Kitchen: Thanksgiving Recipes

(FeatureSource) Succulent turkey, fluffy mashed potatoes and rich stuffing—the thought of a Thanksgiving feast can tug on our heartstrings. This year, have your children contribute to the spread by helping out in the kitchen.
“While younger chefs may not be ready to tackle the family turkey, they can certainly pitch in around the kitchen for the holidays,” says Penny Warner, author of “Kids’ Party Cookbook” (Meadowbrook Press, ).
These recipes are simple, but they still require adult supervision, Warner says. “Working together over a steamy stovetop is a great way to spend quality time together,” she adds.
The following recipes gain their flavor not from fat, but from zesty juices and spices. “In a time of increasing childhood obesity, it’s important to focus on healthy alternatives,” says Warner.
Pilgrim Pies
Serves 6
20 minutes to prepare
30-35 minutes to bake
Ingredients
2 tablespoons cornstarch
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup frozen apple juice concentrate
1 tablespoon lemon juice
1 tablespoon low-fat margarine
6 cups baking apples, sliced and unpeeled
6 individual pastry or graham cracker shells
Directions
1. Preheat oven to 350 degrees.
2. Blend cornstarch, cinnamon, nutmeg, apple juice concentrate and lemon juice in saucepan.
3. Cook over medium heat until thickened. Then add margarine.
4. Put equal number of apple slices into each shell.
5. Pour apple juice mixture over apples.
6. Bake at 350 degrees for 30-35 minutes, until crust is brown and mixture is sizzling.
Pair this tasty dessert with a special beverage for the holidays.
CranApple Cider
Serves 12
20 minutes to prepare
Ingredients
12 cinnamon sticks
1 32-ounce bottle natural apple juice
1 32-ounce bottle cranberry juice
Directions
1. Combine all ingredients in a saucepan and bring to a boil.
2. Simmer 20 minutes.
3. Serve in coffee mugs with cinnamon stick stirrers.
